Ingredients
- 2 lbs chicken thighs, cut into serving pieces
- 3 medium potatoes, peeled and cubed
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 cup water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon whole peppercorns
- 3 bay leaves
- 2 tablespoons cooking oil
- Salt to taste
- 1 tablespoon brown sugar (optional)
Instructions
- In a large bowl, marinate the chicken thighs in soy sauce and vinegar for at least 30 minutes.
- Heat the cooking oil in a large pan over medium heat. Add the potatoes and cook until lightly browned. Remove and set aside.
- In the same pan, sauté the garlic and onion until fragrant.
- Add the marinated chicken and cook until lightly browned on all sides.
- Pour in the remaining marinade, water, whole peppercorns, and bay leaves. Bring to a boil, then reduce heat and simmer for 30 minutes or until the chicken is tender.
- Add the cooked potatoes back into the pan and simmer for an additional 5 minutes.
- Taste the adobo and adjust the seasoning with salt. If desired, add brown sugar for a slightly sweet flavor.
- Serve hot with steamed rice and enjoy!
