Ingredients
- 2 zucchinis, sliced
- 2 yellow squash, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1/2 cup of tomato sauce
- 1 teaspoon of red pepper flakes
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 375 degrees F.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add 2 zucchinis, 2 yellow squash, 1 chopped onion, and 2 minced cloves of garlic to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Stir in 1 can of diced tomatoes, 1/2 cup of tomato sauce, 1 teaspoon of red pepper flakes, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper. Season with salt and pepper to taste. Cook for an additional 5 minutes.
