Instructions

  • Cook the fresh Chinese wheat noodles according to the package instructions. Drain and set aside.
  • In a small bowl, mix 1/4 cup of Zhajiang sauce with 2 tbsp of spicy chili oil. Set aside.
  • In a wok or large skillet, heat 2 tbsp of vegetable oil over medium-high heat. Add 1/2 cup of ground pork and stir-fry until cooked through.
  • Add 1/4 cup of diced onion to the wok and stir-fry for 2-3 minutes until softened.
  • Pour in 1/4 cup of chicken broth, 2 tbsp of soy sauce, and 1 tbsp of sugar. Stir well and let it simmer for 2-3 minutes.
  • Add the cooked noodles to the wok and toss to coat them with the sauce.
  • Divide the noodles among serving bowls and top with the Zhajiang and chili oil mixture.
  • Garnish with 1/4 cup of diced cucumber, 1/4 cup of shredded carrots, and 1/4 cup of chopped green onions.
