Spicy Zhajiangmian with Chili Oil

Ingredients
- 8 oz of fresh Chinese wheat noodles
- 1/4 cup of Zhajiang sauce
- 2 tbsp of spicy chili oil
- 1/2 cup of ground pork
- 1/4 cup of diced onion
- 1/4 cup of diced cucumber
- 2 tbsp of soy sauce
- 1 tbsp of sugar
- 1/4 cup of chicken broth
- 2 tbsp of vegetable oil
- 1/4 cup of chopped green onions
- 1/4 cup of shredded carrots
Instructions
- Cook the fresh Chinese wheat noodles according to the package instructions. Drain and set aside.
- In a small bowl, mix 1/4 cup of Zhajiang sauce with 2 tbsp of spicy chili oil. Set aside.
- In a wok or large skillet, heat 2 tbsp of vegetable oil over medium-high heat. Add 1/2 cup of ground pork and stir-fry until cooked through.
- Add 1/4 cup of diced onion to the wok and stir-fry for 2-3 minutes until softened.
- Pour in 1/4 cup of chicken broth, 2 tbsp of soy sauce, and 1 tbsp of sugar. Stir well and let it simmer for 2-3 minutes.
- Add the cooked noodles to the wok and toss to coat them with the sauce.
- Divide the noodles among serving bowls and top with the Zhajiang and chili oil mixture.
- Garnish with 1/4 cup of diced cucumber, 1/4 cup of shredded carrots, and 1/4 cup of chopped green onions.
- Serve hot and enjoy the spicy Zhajiangmian with chili oil!
