Instructions

  • Reduce the heat to low and add 1 cup of all-purpose flour. Stir constantly until the mixture forms a ball, about 1-2 minutes.
  • Transfer the dough to a mixing bowl and let it cool for 5 minutes.
  • Using an electric mixer, beat in 4 eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  • Mix in 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract until the dough is smooth and glossy.
  • In a large pot, heat 2 inches of vegetable oil to 375°F (190°C).
  • Scoop tablespoon-sized balls of dough and carefully drop them into the hot oil. Fry in batches, turning occasionally, until golden brown, about 3-4 minutes.
  • Remove the zeppole with a slotted spoon and drain on paper towels.
