Ingredients
- 1 cup of water
- 1/2 cup of unsalted butter
- 1/4 teaspoon of salt
- 1 cup of all-purpose flour
- 4 eggs
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a medium saucepan, combine 1 cup of water, 1/2 cup of unsalted butter, and 1/4 teaspoon of salt. Bring to a boil over medium heat.
- Reduce the heat to low and add 1 cup of all-purpose flour. Stir constantly until the mixture forms a ball, about 1-2 minutes.
- Transfer the dough to a mixing bowl and let it cool for 5 minutes.
- Using an electric mixer, beat in 4 eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Mix in 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract until the dough is smooth and glossy.
- In a large pot, heat 2 inches of vegetable oil to 375°F (190°C).
- Scoop tablespoon-sized balls of dough and carefully drop them into the hot oil. Fry in batches, turning occasionally, until golden brown, about 3-4 minutes.
- Remove the zeppole with a slotted spoon and drain on paper towels.
- Dust the zeppole with powdered sugar and serve warm. Enjoy!
