The history of wood-grilled salmon served with garlic mashed potatoes dates back to the Pacific Northwest, where the abundance of fresh salmon and the region's love for outdoor grilling inspired this delectable combination. Renowned chefs in Seattle and Portland, such as Tom Douglas and Vitaly Paley, have elevated this dish to new heights, infusing it with their unique culinary flair. The smoky flavor from the wood-grilling process perfectly complements the richness of the salmon, while the creamy garlic mashed potatoes add a comforting touch. Today, the best versions of this dish can be savored in upscale seafood restaurants along the West Coast. The key to perfecting this dish lies in sourcing high-quality, fresh salmon and using aromatic wood chips for grilling. Alternatively, some chefs opt for cedar planks to impart an extra layer of flavor to the salmon. Whether it's a special occasion or a casual dinner, wood-grilled salmon with garlic mashed potatoes is a timeless classic that never fails to impress.
