Ingredients
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 2 lbs Yukon Gold potatoes, peeled and quartered
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat a wood grill to medium-high heat.
- In a small bowl, mix together 2 tbsp of olive oil, 1 tsp of salt, 1/2 tsp of black pepper, 1/2 tsp of paprika, and 1/2 tsp of garlic powder.
- Brush the salmon fillets with the olive oil mixture, ensuring they are evenly coated on both sides.
- Place the salmon fillets on the preheated wood grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and set aside.
- While the salmon is grilling, place the quartered potatoes and minced garlic in a large pot. Cover with water and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and garlic, then return them to the pot. Add the unsalted butter and heavy cream to the pot.
- Mash the potatoes and garlic with a potato masher until smooth and creamy. Season with salt and pepper to taste.
- To serve, spoon a generous portion of the garlic mashed potatoes onto each plate and top with a wood-grilled salmon fillet. Garnish with chopped fresh parsley and serve hot.
