Instructions

  • In a small bowl, combine the wheat berries and warm water. Let soak for 1 hour, then drain.
  • In a large bowl, dissolve the yeast in 1/2 cup of warm water. Let it sit for 5 minutes until it becomes frothy.
  • Add the drained wheat berries, honey, olive oil, salt, and 2 cups of whole wheat flour to the yeast mixture. Stir until well combined.
  • Gradually add the remaining flour, 1/2 cup at a time, until the dough comes together and is slightly sticky.
  • Turn the dough out onto a floured surface and knead for 8-10 minutes, adding more flour as needed, until the dough is smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Punch down the dough and shape it into a loaf. Place it in a greased 9x5 inch loaf pan, cover, and let it rise for another 30 minutes.
  • Preheat the oven to 350°F (175°C).
  • Bake the bread for 30-35 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  • Remove the bread from the pan and let it cool on a wire rack before slicing and serving.
