Created by: Howcan Team

Ingredients

  • 1 cup wheat berries
  • 2 1/2 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 3 1/2 - 4 cups whole wheat flour

Instructions

  • In a small bowl, combine the wheat berries and warm water. Let soak for 1 hour, then drain.
  • In a large bowl, dissolve the yeast in 1/2 cup of warm water. Let it sit for 5 minutes until it becomes frothy.
  • Add the drained wheat berries, honey, olive oil, salt, and 2 cups of whole wheat flour to the yeast mixture. Stir until well combined.
  • Gradually add the remaining flour, 1/2 cup at a time, until the dough comes together and is slightly sticky.
  • Turn the dough out onto a floured surface and knead for 8-10 minutes, adding more flour as needed, until the dough is smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Punch down the dough and shape it into a loaf. Place it in a greased 9x5 inch loaf pan, cover, and let it rise for another 30 minutes.
  • Preheat the oven to 350°F (175°C).
  • Bake the bread for 30-35 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  • Remove the bread from the pan and let it cool on a wire rack before slicing and serving.

Wheat berry bread has been a staple in many cultures for centuries, with its origins dating back to ancient civilizations in the Middle East and Europe. The bread is made from whole wheat berries, which are the entire wheat kernel, including the bran, germ, and endosperm. This results in a hearty, nutty flavor and a dense, chewy texture. Chefs and bakers in regions like the Mediterranean and the Levant have perfected the art of making wheat berry bread, often incorporating local ingredients and traditional baking techniques. Today, the best versions of this dish can be found in artisanal bakeries and health-conscious restaurants that prioritize using high-quality, organic wheat berries and natural leavening agents. To make the perfect wheat berry bread, it's crucial to soak the wheat berries overnight to soften them and enhance their flavor and texture. Additionally, using a sourdough starter can add complexity to the bread's flavor profile. Whether enjoyed as a simple slice with butter or used for sandwiches, wheat berry bread continues to be a beloved and nutritious choice for bread enthusiasts worldwide.
