Instructions

  • Lay the whole wheat tortillas on a clean surface.
  • Spread 1/4 cup of hummus on each tortilla, leaving a 1-inch border around the edges.
  • Evenly distribute the shredded carrots, sliced cucumber, red bell pepper, mixed salad greens, crumbled feta cheese, and chopped fresh parsley on top of the hummus.
  • Season with salt and pepper to taste.
  • Fold the bottom edge of each tortilla up over the filling, then fold in the sides, and roll tightly to enclose the filling.
  • Slice the wraps in half diagonally and serve immediately, or wrap in parchment paper for a to-go lunch option.
