Ingredients
- 1 cup of long-grain white rice
- 1 1/2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1/2 block of firm tofu, pressed and cubed
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a medium saucepan, combine 1 cup of rice and 1 1/2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
