Instructions

  • In a large pot, heat 1 tbsp of olive oil over medium heat.
  • Add the chopped onion and sauté for 5 minutes, or until translucent.
  • Stir in the minced garlic and grated ginger, and cook for an additional 2 minutes.
  • Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in the coconut milk, maple syrup, and ground cumin. Season with salt and pepper to taste.
  • Simmer the soup for an additional 5 minutes to allow the flavors to meld together.
  • Ladle the soup into bowls and garnish with fresh cilantro before serving.
