Instructions

  • In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt. Gradually add 1/2 cup of warm water, mixing until a dough forms. Knead the dough on a floured surface for 5 minutes, then cover and let it rest for 30 minutes.
  • In a separate bowl, mix together 2 cups of mashed potatoes, 1 cup of shredded cheddar cheese, and 1/2 finely chopped onion. Season with salt and pepper to taste.
  • Divide the rested dough into 4 equal parts. Roll out each part into a thin circle and cut out rounds using a glass or cookie cutter.
  • Place a spoonful of the potato and cheese filling in the center of each dough round. Fold the dough over the filling to create a half-moon shape, then pinch the edges to seal the vareniki.
  • Bring a large pot of salted water to a boil. Carefully drop the vareniki into the boiling water and cook for 3-4 minutes, or until they float to the surface.
  • Remove the vareniki with a slotted spoon and transfer to a plate. Repeat with the remaining vareniki.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the boiled vareniki and cook until lightly golden and crispy, about 3-4 minutes per side.
