Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup butter
- Salt and pepper to taste
- Sour cream and chopped chives for serving
Instructions
- In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt.
- Gradually add 1/2 cup of warm water, mixing until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes, then cover and let it rest for 30 minutes.
- In a separate bowl, mix together 2 cups of mashed potatoes, 1 cup of shredded cheddar cheese, and salt and pepper to taste.
- Roll out the dough on a floured surface to 1/8 inch thickness, then cut out circles using a cookie cutter or a glass.
- Place a spoonful of the potato and cheese filling in the center of each circle, then fold the dough over the filling and pinch the edges to seal.
- Bring a large pot of salted water to a boil, then carefully drop in the vareniki in batches and cook for 3-4 minutes, or until they float to the surface.
- In a skillet, sauté 1/2 cup of diced onion in 1/4 cup of butter until golden brown.
- Serve the vareniki with the sautéed onions on top, along with sour cream and chopped chives. Enjoy!
