Instructions

  • In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt.
  • Gradually add 1/2 cup of warm water, mixing until a dough forms.
  • Knead the dough on a floured surface for 5-7 minutes, then cover and let it rest for 30 minutes.
  • In a separate bowl, mix together 2 cups of mashed potatoes, 1 cup of shredded cheddar cheese, and salt and pepper to taste.
  • Roll out the dough on a floured surface to 1/8 inch thickness, then cut out circles using a cookie cutter or a glass.
  • Place a spoonful of the potato and cheese filling in the center of each circle, then fold the dough over the filling and pinch the edges to seal.
  • Bring a large pot of salted water to a boil, then carefully drop in the vareniki in batches and cook for 3-4 minutes, or until they float to the surface.
  • In a skillet, sauté 1/2 cup of diced onion in 1/4 cup of butter until golden brown.
