Instructions

  • In a bowl, mix 1 cup of crushed chocolate cookies with 1/4 cup of melted butter.
  • Press the cookie mixture into the bottom of a 9x9 inch pan to form the crust.
  • Allow the vanilla ice cream to soften at room temperature for 10 minutes.
  • Spread the softened ice cream evenly over the cookie crust.
  • Drizzle 1 cup of caramel sauce over the ice cream layer.
  • Place the pan in the freezer and freeze for at least 4 hours or until the ice cream is firm.
  • Once the ice cream is firm, remove the pan from the freezer and cut into 8 bars.
  • In a microwave-safe bowl, combine 1 cup of milk chocolate chips and 2 tablespoons of vegetable oil.
  • Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  • Dip each ice cream bar into the melted chocolate, coating it completely.
  • Place the coated bars on a parchment-lined baking sheet and return to the freezer for 10 minutes to allow the chocolate to set.
  • Serve and enjoy!
