Instructions

  • Add the chopped turnip greens to the pot and sauté for another 2-3 minutes, until they begin to wilt.
  • Pour in 4 cups of vegetable broth and bring the mixture to a boil.
  • Once boiling, reduce the heat to low and let the soup simmer for 15 minutes.
  • Add the diced potatoes, salt, black pepper, and red pepper flakes to the pot and continue to simmer for an additional 10-15 minutes, or until the potatoes are tender.
