Ingredients
- 1 bunch of turnip greens, washed and chopped
- 1 onion, diced
- 3 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of diced potatoes
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and minced garlic to the pot and sauté for 3-4 minutes, until the onion is translucent.
- Add the chopped turnip greens to the pot and sauté for another 2-3 minutes, until they begin to wilt.
- Pour in 4 cups of vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for 15 minutes.
- Add the diced potatoes, salt, black pepper, and red pepper flakes to the pot and continue to simmer for an additional 10-15 minutes, or until the potatoes are tender.
- Taste the soup and adjust the seasoning if necessary.
- Serve the turnip green soup hot and enjoy!
