Created by: Howcan Team
Ingredients
- 1 pound ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen peas and carrots
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground turkey over medium heat until browned. Add 1 diced onion and 2 minced garlic cloves, and cook until the onion is softened.
- Stir in 1 diced red bell pepper and 1 cup of frozen peas and carrots, and cook for an additional 3-4 minutes.
- Add 1 cup of long-grain white rice, 2 cups of chicken broth, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the rice is almost tender and most of the liquid is absorbed.
- Transfer the turkey and rice mixture to the prepared baking dish. Sprinkle 1 cup of shredded cheddar cheese on top.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving. Enjoy!
