Instructions

  • In a medium bowl, mix together 1 can of drained tuna, 1 ripe mashed avocado, 1/4 cup of diced red onion, 1/4 cup of diced celery, 2 tablespoons of mayonnaise, 1 tablespoon of lemon juice, and salt and pepper to taste.
  • Lay out 2 large whole wheat tortillas and divide the tuna and avocado mixture evenly between the two tortillas, spreading it out to cover the entire surface.
  • Top each tortilla with 1/2 cup of mixed greens.
  • Roll up the tortillas tightly, folding in the sides as you go to create a wrap.
  • Slice each wrap in half diagonally and serve immediately, or wrap in foil for later.
