Ingredients
- 1 lb fresh salmon fillet, skin removed
- 1/4 cup breadcrumbs
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup chopped pineapple
- 1 egg
- 1 tbsp lime juice
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 whole wheat burger buns
- Lettuce, tomato, and avocado for topping
Instructions
- Preheat grill to medium-high heat.
- Cut the salmon into chunks and place in a food processor. Pulse until finely chopped.
- In a large bowl, combine the chopped salmon, breadcrumbs, red bell pepper, red onion, cilantro, pineapple, egg, lime juice, garlic powder, salt, and black pepper. Mix until well combined.
- Divide the mixture into 4 equal portions and shape into burger patties.
- Place the salmon patties on the grill and cook for 4-5 minutes on each side, or until cooked through.
- Toast the burger buns on the grill for 1-2 minutes.
- Assemble the burgers by placing a salmon patty on each bun, and topping with lettuce, tomato, and avocado.
- Serve the tropical salmon burgers immediately and enjoy!
