Ingredients
- 1 lb extra-firm tofu, drained and cubed
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons cornstarch
- 2 cups vegetable broth
- 1 tablespoon sugar
- 1/2 teaspoon ground white pepper
- 1 lb wide rice noodles, cooked according to package instructions
Instructions
- In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the cubed tofu and stir-fry for 5-7 minutes, or until golden brown. Remove from the wok and set aside.
- In the same wok, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
- Add the minced garlic and stir-fry for 1 minute, or until fragrant.
- Add the broccoli, carrots, bell peppers, and mushrooms to the wok. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, vegetable broth, sugar, and white pepper.
- Pour the sauce mixture into the wok with the vegetables. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened.
- Add the cooked rice noodles and stir to combine with the vegetables and sauce.
- Gently fold in the stir-fried tofu, being careful not to break up the tofu cubes.
