Ingredients
- 1 1/2 cups of graham cracker crumbs
- 1/4 cup of granulated sugar
- 1/2 cup of unsalted butter, melted
- 3 (8-ounce) packages of cream cheese, softened
- 1 cup of granulated sugar
- 3 large eggs
- 1/4 cup of sour cream
- 1/4 cup of espresso or strong coffee, cooled
- 1 tablespoon of coffee liqueur
- 1 teaspoon of vanilla extract
- 1/4 cup of cocoa powder
- 1/4 cup of semisweet chocolate chips
- 1/4 cup of heavy cream
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat 3 (8-ounce) packages of softened cream cheese and 1 cup of granulated sugar until smooth. Add 3 large eggs, one at a time, mixing well after each addition. Stir in 1/4 cup of sour cream, 1/4 cup of cooled espresso or strong coffee, 1 tablespoon of coffee liqueur, and 1 teaspoon of vanilla extract. Pour the filling over the crust.
- Bake for 45-50 minutes, or until the center is almost set. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- In a small saucepan, heat 1/4 cup of heavy cream until it just begins to simmer. Remove from heat and add 1/4 cup of cocoa powder and 1/4 cup of semisweet chocolate chips. Stir until smooth and let it cool slightly.
- Drizzle the chocolate mixture over the chilled cheesecake. Slice and serve. Enjoy!
