  • In a large bowl, beat 3 (8-ounce) packages of softened cream cheese and 1 cup of granulated sugar until smooth. Add 3 large eggs, one at a time, mixing well after each addition. Stir in 1/4 cup of sour cream, 1/4 cup of cooled espresso or strong coffee, 1 tablespoon of coffee liqueur, and 1 teaspoon of vanilla extract. Pour the filling over the crust.
  • Bake for 45-50 minutes, or until the center is almost set. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • In a small saucepan, heat 1/4 cup of heavy cream until it just begins to simmer. Remove from heat and add 1/4 cup of cocoa powder and 1/4 cup of semisweet chocolate chips. Stir until smooth and let it cool slightly.
