Teriyaki Tofu Bowl

Ingredients
- 1 block of firm tofu, pressed and cubed
- 1 cup of cooked white rice
- 2 cups of mixed vegetables (such as broccoli, bell peppers, and carrots)
- 1/4 cup of soy sauce
- 2 tablespoons of brown sugar
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 2 tablespoons of cornstarch
- 2 tablespoons of water
- 2 tablespoons of vegetable oil
- Sesame seeds and green onions for garnish
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, minced garlic, and grated ginger to make the teriyaki sauce.
- In another small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
- Push the vegetables to the side of the skillet and pour the teriyaki sauce into the center. Stir the slurry again and pour it into the skillet, stirring constantly until the sauce thickens.
- Add the crispy tofu back into the skillet and toss to coat everything in the teriyaki sauce.
- To assemble the bowls, divide the cooked rice among 4 serving bowls. Top with the teriyaki tofu and vegetables. Garnish with sesame seeds and sliced green onions.
- Serve immediately and enjoy!
