Ingredients
- 1 bunch of Swiss chard, stems removed and leaves chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 oz) of white beans, drained and rinsed
- 6 cups of vegetable broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook for 5 minutes, or until the vegetables are softened.
- Stir in the chopped Swiss chard leaves and cook for an additional 3 minutes, until wilted.
- Add the drained and rinsed white beans, vegetable broth, dried thyme, and dried oregano to the pot. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes, allowing the flavors to meld together.
- Taste and adjust seasoning if needed.
