Ingredients
- 1 lb sweet Italian sausage, casings removed
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced

- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups baby spinach leaves
- 1/4 cup grated Parmesan cheese
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.

- Sprinkle the grated Parmesan cheese over the skillet and stir to combine. Cook for an additional 2 minutes until the cheese is melted and the flavors are well combined.
- Remove the skillet from the heat and serve the sweet potato and sausage mixture hot, garnished with additional Parmesan cheese if desired.
