  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced sweet potatoes and chopped onion. Cook, stirring occasionally, until the sweet potatoes are tender, about 10 minutes.
  • Add the minced garlic, dried thyme, and paprika to the skillet. Season with salt and pepper to taste. Cook for an additional 2 minutes, stirring constantly.
  • Return the cooked sausage to the skillet and stir to combine with the sweet potato mixture.
  • Add the baby spinach leaves to the skillet and cook until wilted, about 2 minutes.
  • Sprinkle the grated Parmesan cheese over the skillet and stir to combine. Cook for an additional 2 minutes until the cheese is melted and the flavors are well combined.
