Ingredients
- 1 1/2 cups of mashed sweet potatoes
- 3/4 cup of brown sugar
- 1/2 cup of heavy cream
- 2 eggs
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
- 1/2 cup of chopped pecans
- 1 9-inch unbaked pie crust
Instructions
- Preheat the oven to 350 degrees F.
- In a large mixing bowl, combine 1 1/2 cups of mashed sweet potatoes, 3/4 cup of brown sugar, 1/2 cup of heavy cream, 2 eggs, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of salt. Mix until well combined.
- Pour the sweet potato mixture into the unbaked pie crust.
- Sprinkle 1/2 cup of chopped pecans evenly over the top of the sweet potato mixture.
- Bake in the preheated oven for 50-60 minutes, or until the center is set.
