Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups sliced strawberries
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- Whipped cream for topping
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat the cream cheese and 1/2 cup granulated sugar until smooth. Add the eggs one at a time, then stir in 1 teaspoon of vanilla extract. Pour the cream cheese mixture over the cooled crust.
- Bake in the preheated oven for 40 minutes, or until the center is almost set. Allow to cool, then refrigerate for at least 4 hours or overnight.
- In a large bowl, whip the heavy cream with 1/4 cup powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Set aside.
- In another bowl, combine the sliced strawberries, 1/4 cup granulated sugar, and lemon juice. Let it sit for 15 minutes to macerate.
- To assemble the cheesecake, spread the whipped cream over the chilled cheesecake. Top with the macerated strawberries and additional whipped cream if desired.
