Strawberry Shortcake

Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for strawberries)
- 2 cups whipped cream or whipped topping
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, combine 2 cups of flour, 1/4 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
- Add the cold butter pieces to the flour mixture and use a pastry cutter or fork to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- In a separate bowl, mix together the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick round.
- Use a 3-inch round biscuit cutter to cut out 8 shortcakes. Place them on the prepared baking sheet and bake for 15-18 minutes, or until golden brown. Allow to cool completely.
- In a medium bowl, toss the sliced strawberries with 1/4 cup of sugar. Let them sit for 15-20 minutes to macerate and release their juices.
- To assemble the shortcakes, slice each cake in half horizontally. Place the bottom half on a plate, top with a spoonful of strawberries and a dollop of whipped cream, then place the top half of the cake on top. Add more strawberries and whipped cream on top if desired. Serve immediately and enjoy!
