Strawberry Shortcake
Created by: Howcan Team
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for strawberries)
- 2 cups whipped cream or whipped topping
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, combine 2 cups of flour, 1/4 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
- Add the cold butter pieces to the flour mixture and use a pastry cutter or fork to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- In a separate bowl, mix together the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick round.
- Use a 3-inch round biscuit cutter to cut out 8 shortcakes. Place them on the prepared baking sheet and bake for 15-18 minutes, or until golden brown. Allow to cool completely.
- In a medium bowl, toss the sliced strawberries with 1/4 cup of sugar. Let them sit for 15-20 minutes to macerate and release their juices.
- To assemble the shortcakes, slice each cake in half horizontally. Place the bottom half on a plate, top with a spoonful of strawberries and a dollop of whipped cream, then place the top half of the cake on top. Add more strawberries and whipped cream on top if desired. Serve immediately and enjoy!
Strawberry Shortcake is a classic American dessert that dates back to the 19th century. It consists of a sweet biscuit or sponge cake, topped with macerated strawberries and whipped cream. The dish gained popularity in the United States during the 1850s, and has since become a beloved summer treat. The best version of this dish can be found in the southern United States, where fresh, juicy strawberries are abundant. The key to a perfect Strawberry Shortcake lies in the quality of the strawberries and the lightness of the cake. Some chefs also add a touch of vanilla or almond extract to enhance the flavor.
