  • Spread the softened 1 quart of strawberry ice cream over the crust in an even layer. Place in the freezer to set for 1 hour.
  • In a large bowl, beat the softened 8 oz cream cheese, 1/2 cup powdered sugar, and 1 tsp vanilla extract until smooth. In a separate bowl, whip the 1/2 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Spread this cheesecake layer over the set ice cream layer. Return to the freezer and freeze for at least 3 hours, or until firm.
