Instructions
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and 1 cup of sugar until smooth. Mix in the vanilla extract. Beat in the eggs one at a time, mixing well after each addition. Blend in the sour cream, flour, milk, lemon zest, and salt. Pour filling over the crust.
- Bake in the preheated oven for 60 minutes, or until set. Allow to cool before removing the pan rim.
- In a saucepan, combine the strawberries, 1/2 cup sugar, cornstarch, and water. Bring to a boil, and simmer until thickened, about 10 minutes. Cool slightly, then pour over the cheesecake. Refrigerate until chilled before serving.
