Ingredients
- 8 oz tempeh, cut into cubes
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a small bowl, whisk together 3 tbsp soy sauce, 2 tbsp sesame oil, 1 tbsp rice vinegar, and 1 tbsp maple syrup. Set aside.
- Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tempeh and stir-fry for 5-7 minutes, or until golden brown and crispy. Remove from the skillet and set aside.
