Instructions

  • Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent.
  • Return the browned beef to the skillet. Add the beef stock, ale, diced carrots, diced celery, thyme, and rosemary. Season with salt and pepper. Bring to a simmer, then cover and cook for 1.5 hours, or until the beef is tender.
  • Transfer the beef mixture to a pie dish. Roll out the puff pastry and place it over the pie dish, trimming any excess pastry. Cut a few slits in the pastry to allow steam to escape.
  • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the filling is bubbling.
  • Allow the pie to cool for a few minutes before serving. Enjoy!
