  • Add the chopped onion and minced garlic to the pot and sauté for 5 minutes, or until the onion is soft and translucent.
  • Pour in 4 cups of vegetable broth and bring to a simmer.
  • Add the chopped spinach to the pot and cook for 3-4 minutes, or until wilted.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and puree in batches, then return to the pot.
  • Stir in the crumbled feta cheese and season with salt and pepper to taste.
  • Simmer for an additional 5 minutes, then remove from heat.
  • Serve the spinach and feta soup hot, garnished with an extra sprinkle of feta cheese if desired.
