  • In a large pot, combine 8 cups of apple cider, 1/4 cup of brown sugar, 2 cinnamon sticks, 1 teaspoon of whole cloves, and 1 teaspoon of whole allspice.
  • Bring the mixture to a simmer over medium heat, stirring occasionally.
  • Once simmering, reduce the heat to low and let the cider steep for 20 minutes, stirring occasionally.
  • After 20 minutes, remove the pot from the heat and discard the cinnamon sticks, cloves, and allspice using a fine-mesh strainer.
  • Stir in 1 cup of dark rum and return the pot to low heat to warm the spiked apple cider for an additional 5 minutes.
  • Pour the spiked apple cider into mugs, garnish with a cinnamon stick if desired, and serve hot. Enjoy!
