Ingredients
- 2 lbs ground beef
- 1 cup bread crumbs
- 1/2 cup milk
- 1/2 cup ketchup
- 1/4 cup diced onion
- 2 jalapenos, seeded and diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- 1/4 cup chopped fresh cilantro
- 1/4 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 2 lbs of ground beef, 1 cup of bread crumbs, 1/2 cup of milk, 1/2 cup of ketchup, 1/4 cup of diced onion, 2 diced jalapenos, 2 minced cloves of garlic, 1 tsp of salt, 1/2 tsp of black pepper, 1/2 tsp of cayenne pepper, and 1/2 tsp of paprika. Mix well until all ingredients are evenly combined.
- Transfer the meat mixture to a greased loaf pan, shaping it into a loaf shape.
- Bake in the preheated oven for 45 minutes.
- Remove the meatloaf from the oven and sprinkle 1/4 cup of chopped fresh cilantro and 1/4 cup of shredded cheddar cheese on top.
- Return the meatloaf to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Allow the meatloaf to cool for 10 minutes before slicing and serving. Enjoy!
