Spicy Mac and Cheese

Ingredients
- 8 oz elbow macaroni
- 3 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 1/2 cups milk
- 1/4 cup butter
- 2 1/2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup panko breadcrumbs
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add 8 oz of elbow macaroni and cook for 8 to 10 minutes, or until al dente. Drain.
- In a saucepan, melt 1/4 cup of butter over medium heat. Stir in 2 1/2 tablespoons of all-purpose flour to make a roux. Cook, stirring, for 2 minutes.
- Gradually whisk in 2 1/2 cups of milk, and continue cooking and stirring until the mixture thickens, about 5 minutes.
- Stir in 3 cups of shredded sharp cheddar cheese and 1/2 cup of grated Parmesan cheese until the cheese is melted and the sauce is smooth.
- Season the cheese sauce with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, 1/4 teaspoon of cayenne pepper, 1/4 teaspoon of garlic powder, and 1/4 teaspoon of onion powder.
- Mix the cooked macaroni into the cheese sauce, then pour into the prepared baking dish.
- In a small bowl, combine 1/4 cup of panko breadcrumbs with a pinch of paprika and a pinch of salt. Sprinkle over the mac and cheese.
- Bake in the preheated oven for 30 minutes, or until the breadcrumbs are golden brown and the mac and cheese is bubbly.
- Allow to cool for a few minutes before serving. Enjoy the spicy mac and cheese!
