Ingredients
- 1 cup of dried lentils
- 4 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) of diced tomatoes
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, bell pepper, carrots, and celery. Cook for 5-7 minutes until the vegetables are softened.
- Add the dried lentils, vegetable broth, diced tomatoes, cumin, paprika, and cayenne pepper to the pot. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the spicy lentil and vegetable stew hot, garnished with fresh cilantro.
