Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 cup buttermilk
- 2 large eggs
- 1 cup chopped pickled jalapenos
- 8 hot dogs
- 8 wooden skewers
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 1 tablespoon chipotle peppers in adobo sauce, minced
- 1 teaspoon lime juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, whisk together 1 cup of flour, 1 cup of cornmeal, 1/4 cup of sugar, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1/2 teaspoon of cayenne pepper.
- In a separate bowl, whisk together 1 cup of buttermilk and 2 eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in 1 cup of chopped pickled jalapenos.
- Insert a wooden skewer into each hot dog, leaving enough exposed for a handle. Dip each hot dog into the batter, coating evenly.
- In a large pot, heat 2 inches of vegetable oil to 350°F. Carefully place the battered hot dogs into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
- In a small bowl, mix 1/2 cup of mayonnaise, 1 tablespoon of minced chipotle peppers in adobo sauce, 1 teaspoon of lime juice, and 1/2 teaspoon of garlic powder. Season with salt and pepper to taste.
