  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish

Instructions

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tbsp of olive oil. Add the diced onion and cook until softened. Add the minced garlic and cook for another minute.
  • Stir in the diced tomatoes, chicken broth, heavy cream, red pepper flakes, oregano, and basil. Bring the mixture to a simmer.
  • Add the cooked chicken back into the skillet and let the sauce simmer for 5 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  • Add the cooked penne pasta to the skillet and toss to coat the pasta with the spicy chicken sauce.
