Instructions

  • In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of chili powder, 1/2 teaspoon of cayenne pepper, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
  • Rub the spice mixture onto both sides of the chicken breasts.
  • Heat a grill pan or skillet over medium-high heat and cook the chicken for 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
  • Assemble the panini by placing the sliced avocado on two slices of bread, followed by the sliced chicken and shredded cheese. Top with the remaining bread slices.
  • Spread butter on the outsides of the sandwiches.
  • Heat a panini press or a skillet over medium heat. Place the sandwiches in the panini press or skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • Slice the panini in half and serve hot. Enjoy!
