Spicy Cauliflower Cheddar Soup

Ingredients
- 1 head of cauliflower, chopped into florets
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of whole milk
- 2 cups of shredded cheddar cheese
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and minced garlic to the pot, and sauté until the onion is translucent.
- Add the chopped cauliflower florets to the pot, and sauté for another 5 minutes.
- Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the cauliflower is tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth, then return to the pot.
- Stir in the whole milk, shredded cheddar cheese, cayenne pepper, and paprika. Cook over low heat, stirring constantly, until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
