  • 2 cups of shredded cheddar cheese
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced onion and minced garlic to the pot, and sauté until the onion is translucent.
  • Add the chopped cauliflower florets to the pot, and sauté for another 5 minutes.
  • Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the cauliflower is tender.
  • Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in the whole milk, shredded cheddar cheese, cayenne pepper, and paprika. Cook over low heat, stirring constantly, until the cheese is melted and the soup is heated through.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
