Ingredients
- 4 goat feet, cleaned and chopped
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, diced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1 teaspoon coriander
- 4 cups chicken or beef broth
- 2 cups white rice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Add the chopped goat feet and brown on all sides, about 5 minutes.
- Add the chopped onion, minced garlic, and grated ginger to the pot. Cook until the onions are soft and translucent, about 5 minutes.
- Stir in the diced tomatoes, paprika, cayenne pepper, cumin, and coriander. Cook for another 5 minutes to allow the flavors to meld.
- Pour in the chicken or beef broth, and season with salt and pepper to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the goat feet are tender.
- While the goat feet are braising, prepare the white rice according to package instructions.
- Once the goat feet are tender, remove from heat and let it cool slightly.
- Serve the spicy braised goat feet over the cooked white rice, garnished with fresh cilantro.
