Ingredients
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup frozen corn
- 1 cup frozen peas
- 1 can (14 oz) diced tomatoes
- 1 cup long-grain white rice
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook 1 pound of ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes until softened.
- Stir in the diced red and green bell peppers, frozen corn, and frozen peas. Cook for an additional 5 minutes.
- Add the can of diced tomatoes (undrained) and the uncooked white rice to the skillet. Stir to combine.
- Pour in the beef broth and add the chili powder, cayenne pepper, paprika, cumin, salt, and black pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is almost tender and most of the liquid is absorbed.
- Stir in the chopped cilantro and transfer the mixture to a greased 9x13 inch baking dish.
- Sprinkle the shredded cheddar cheese over the top of the casserole.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
