  • Rinse the whole chicken and pat dry with paper towels. Rub the chicken with 2 tablespoons of olive oil, 2 teaspoons of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder, ensuring it is evenly coated.
  • Place the seasoned chicken in the preheated smoker and smoke for 2-3 hours, or until the internal temperature reaches 165°F. Use wood chips for added flavor, such as hickory or applewood.
  • In a small saucepan, combine 1/2 cup of honey, 2 tablespoons of soy sauce, 1 tablespoon of apple cider vinegar, 1 teaspoon of smoked paprika, and 1/2 teaspoon of cayenne pepper. Heat over medium heat, stirring constantly, until the glaze is well combined and slightly thickened.
  • During the last 15 minutes of smoking, brush the honey glaze over the smoked chicken, allowing it to caramelize and create a sticky coating.
  • Once the chicken reaches the desired internal temperature and the glaze is caramelized, remove it from the smoker and let it rest for 10 minutes before carving.
