Instructions

  • In a small bowl, mix 1 tablespoon of olive oil, 2 teaspoons of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to create a spice rub.
  • Rub the spice mixture all over the chicken thighs, cover, and refrigerate for at least 1 hour to marinate.
  • Prepare your smoker for cooking, bringing the temperature to 225°F. Add wood chips for smoke flavor.
  • Place the marinated chicken thighs on the smoker rack and smoke for 2.5 to 3 hours, or until the internal temperature reaches 165°F. Remove from the smoker and let rest for 10 minutes before serving.
  • While the chicken is smoking, place the diced potatoes and minced garlic in a large pot. Cover with water and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.
  • Drain the potatoes and garlic, then return them to the pot. Add the unsalted butter and milk. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
