Instructions

  • Season the beef short ribs with the dry rub, making sure to coat all sides evenly. Let the ribs sit at room temperature for 20 minutes to allow the flavors to penetrate the meat.
  • While the ribs are resting, preheat your smoker to 225°F (107°C) using your choice of wood chips for smoke flavor.
  • Place the seasoned beef short ribs in the smoker and cook for 3-4 hours, or until the internal temperature reaches 203°F (95°C) and the meat is tender.
