Spicy Chipotle Glazed Smoked BBQ Ribs
Created by: Howcan Team
Ingredients
- 3 racks of pork ribs
- 1/4 cup brown sugar
- 2 tablespoons smoked paprika
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 2 chipotle peppers in adobo sauce, minced
- 2 tablespoons adobo sauce
- 1/4 cup water
Instructions
- In a small bowl, mix together 1/4 cup brown sugar, 2 tablespoons smoked paprika, 2 tablespoons garlic powder, 2 tablespoons onion powder, 1 tablespoon salt, and 1 tablespoon black pepper to create a dry rub.
- Rub the dry rub all over the racks of pork ribs, covering them completely. Let the ribs sit at room temperature for 20 minutes to allow the flavors to penetrate the meat.
- While the ribs are resting, preheat your smoker to 225°F (107°C) using hickory or apple wood chips for smoke flavor.
- Place the ribs in the smoker and cook for 3-4 hours, or until the meat is tender and has reached an internal temperature of 190°F (88°C).
- In a small saucepan, combine 1 cup ketchup, 1/4 cup apple cider vinegar, 1/4 cup honey, minced chipotle peppers, adobo sauce, and 1/4 cup water. Simmer the sauce over low heat for 10-15 minutes, stirring occasionally, until it thickens into a glaze.
- During the last 30 minutes of smoking, brush the chipotle glaze onto the ribs every 10 minutes, allowing it to caramelize and create a sticky, spicy coating.
- Once the ribs are done, remove them from the smoker and let them rest for 10 minutes before slicing and serving. Enjoy your spicy chipotle glazed smoked BBQ ribs!
The history of smoked BBQ ribs with a spicy chipotle glaze can be traced back to the southern United States, where BBQ is a way of life. Pitmasters in regions like Texas, Kansas City, and Memphis have perfected the art of smoking and grilling ribs, each with their own unique twist. The addition of a spicy chipotle glaze adds a bold and smoky flavor to the tender, fall-off-the-bone ribs. Chefs like Aaron Franklin in Texas and the legendary Arthur Bryant in Kansas City have popularized this dish, drawing in BBQ enthusiasts from all over. Today, some of the best versions of this dish can be found in renowned BBQ joints like Franklin Barbecue in Austin, Texas. To make this dish at home, it's crucial to get the smoking process just right, using a mix of hardwoods like hickory and oak for that authentic smoky flavor. The chipotle glaze, made with chipotle peppers in adobo sauce, brown sugar, and other spices, adds a fiery kick that elevates the ribs to a whole new level. Whether you're a BBQ purist or a fan of bold flavors, smoked BBQ ribs with a spicy chipotle glaze are a must-try.
