  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • Lettuce leaves and tomato slices for serving

Instructions

  • In a medium bowl, add the chickpeas and use a fork to smash them until chunky.
  • In another bowl, mash the avocado with a fork until creamy.
  • Add the mashed avocado, red onion, cilantro, lime juice, cumin, salt, and pepper to the smashed chickpeas. Mix well to combine.
  • Toast the whole grain bread slices if desired.
  • Divide the chickpea and avocado salad mixture evenly onto two slices of bread. Top with lettuce leaves and tomato slices, then cover with the remaining bread slices.
  • Slice the sandwiches in half and serve immediately. Enjoy!
