Ingredients
- 4 boneless, skinless chicken breasts
- 1 pound baby red potatoes, halved
- 1 pound green beans, trimmed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup of olive oil, 3 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, 1 teaspoon of paprika, and salt and pepper to taste.
- Place the 4 boneless, skinless chicken breasts on a large sheet pan. Brush the chicken with half of the prepared herb and oil mixture.
- In a large bowl, toss 1 pound of halved baby red potatoes, 1 pound of trimmed green beans, 1 sliced red bell pepper, and 1 sliced yellow bell pepper with the remaining herb and oil mixture.
- Arrange the vegetables around the chicken on the sheet pan.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables once halfway through cooking.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
- Serve the sheet pan chicken and veggies hot and enjoy!
