Ingredients
- 4 ribeye steaks, 1 inch thick
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 large russet potatoes, peeled and cubed
- 4 cloves garlic, minced

- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh chives
Instructions
- Preheat a large skillet over high heat. Rub the steaks with olive oil and season generously with salt and pepper.
- Once the skillet is hot, add the steaks and sear for 3-4 minutes on each side for medium-rare, or longer to desired doneness. Remove from the skillet and let rest for 5 minutes.
- While the steaks are resting, place the cubed potatoes and minced garlic in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender, about 15 minutes. Drain well.
- In the same pot, melt the butter over low heat. Add the cooked potatoes and garlic, then pour in the heavy cream. Mash the potatoes until smooth and creamy. Stir in the Parmesan cheese and season with salt and pepper to taste.
- To serve, divide the garlic mashed potatoes among four plates. Place a seared steak on top of each serving and sprinkle with chopped chives. Enjoy!
