Instructions

  • Rinse the quinoa under cold water and drain. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
  • In a medium bowl, combine the diced avocado, chopped red onion, halved cherry tomatoes, chopped cilantro, lime juice, 1 tablespoon of olive oil, and salt and pepper to taste. Gently toss to mix well. Set aside.
  • Season the ahi tuna steaks with salt and pepper. In a large skillet, heat the remaining 1 tablespoon of olive oil over high heat. Once the skillet is hot, add the tuna steaks and sear for 1-2 minutes on each side for rare to medium-rare doneness.
  • To serve, divide the cooked quinoa among 4 plates. Place a seared ahi tuna steak on top of the quinoa on each plate. Spoon the avocado salsa over the tuna. Enjoy immediately.
