Instructions

  • Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible.
  • In a large bowl, combine the grated potatoes, onion, eggs, flour, baking powder, salt, pepper, parsley, and chives. Mix well to form a batter.
  • Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat.
  • Scoop 1/4 cup of the potato batter into the skillet and flatten it with a spatula to form a pancake. Repeat to make 4 pancakes, cooking in batches if necessary.
  • Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Add more oil to the skillet as needed for each batch.
