Instructions

  • Preheat the oven to 375 degrees F. Grease a muffin tin or line with paper liners.
  • In a skillet, cook the ground sausage over medium heat until browned. Drain any excess grease and set aside to cool.
  • In a large bowl, combine 1 cup of flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Stir in the cooked sausage and 1 cup of shredded cheddar cheese.
  • In a separate bowl, whisk together 1/2 cup of milk, 1/4 cup of melted butter, and 2 eggs.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
