Ingredients
- 1 pound of sausage
- 6 slices of bacon
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 cups of cooked rice
- 1 cup of shredded cheddar cheese
Instructions
- Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 6 slices of bacon until crispy. Remove from the skillet and crumble into pieces.
- In the same skillet, cook 1 pound of sausage over medium heat until browned. Add the chopped onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened.
- Stir in 1 can of diced tomatoes, 1 cup of chicken broth, 1 teaspoon of dried thyme, and 1 teaspoon of paprika. Season with salt and pepper to taste. Simmer for 5 minutes.
- Transfer the sausage mixture to the prepared baking dish. Stir in 2 cups of cooked rice and half of the crumbled bacon. Sprinkle 1 cup of shredded cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted.
